(whitebait or Marzuolo truffle)

Tuber Borchii Vitt, or Tuber Albidum Pico commonly called whitebait or marzuolo, is of medium to low quality. It is used in sauces or pates with the rind (skin) similar in part to that of the white truffle or Tuber Magnum Pico, it can be confused and sold as Tuber Magnum Pico causing food fraud and receiving financial penalties. This type of truffle is eaten with ghee and fresh pasta.
